Vanille Kipferl

Zutaten:

70 Gramm Staubzucker
160 Gramm Butter
200 Gramm Mehl (glatt)
70 Gramm Mandeln (geschält und fein gerieben)
Vanillemark
Vamillezucker (zum Wälzen)
Mehl für die Arbeitsfläche

Zubereitung:

Die Butter mit Staubzucker abkneten. Mehl, Vanillemark und die geriebenen Mandeln schnell einarbeiten. Den Teig 30 Minuten kühl rasten lassen. Dann den Teig zu fingerdicken Strängen rollen, in kleine Teile schneiden und daraus kleine Kipferln formen. Auf ein mit Backpapier belegtes Backblech legen und im vorgeheizten Backrohr bei mittlerer Hitze (ca. 180 °C) backen. Noch warm sehr vorsichtig in Vanillezucker wälzen oder mit Vanillezucker bestreuen.

Tipp:

Verarbeiten Sie gekühltes Mehl! So wird der Teig nicht so leicht brandig und behält seine Bindung.
